Chocolate volcano cake
Ingredients:
- 1 cup dark chocolate chips
- ½ cup unsalted butter
- ½ cup all-purpose flour
- 1 cup powdered sugar
- 2 large eggs
- 2 egg yolks
- 1 tsp vanilla extract
- Pinch of salt
- Extra powdered sugar for dusting
- Vanilla ice cream (optional)
Instructions:
- Preheat oven to 425°F.
- In a microwave-safe bowl, melt the chocolate chips and butter together until smooth, about 1-2 minutes. Stir and set aside to cool for a few minutes.
- In a separate bowl, whisk together the flour and powdered sugar.
- In a mixing bowl, beat the eggs, egg yolks, vanilla extract, and salt until light and frothy.
- Pour the melted chocolate mixture into the egg mixture and beat until well combined.
- Combine the dry ingredients with the wet ingredients and beat until the mixture forms a smooth batter.
- Grease 4 ramekins and divide the batter equally between them. Fill each ramekin about 2/3 full.
- Place the ramekins on a baking sheet and bake for 12-15 minutes, until the edges are set and the center is still gooey.
- Remove from the oven and let cool for a minute.
- Run a knife around the edges to loosen the cakes from the ramekins.
- Invert each cake onto a plate and dust with powdered sugar.
- Serve immediately with vanilla ice cream if desired. Enjoy!
