Chocolate volcano cake 




Ingredients:

  • 1 cup dark chocolate chips
  • ½ cup unsalted butter
  • ½ cup all-purpose flour
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 egg yolks
  • 1 tsp vanilla extract
  • Pinch of salt
  • Extra powdered sugar for dusting
  • Vanilla ice cream (optional)

Instructions:

  1. Preheat oven to 425°F.
  2. In a microwave-safe bowl, melt the chocolate chips and butter together until smooth, about 1-2 minutes. Stir and set aside to cool for a few minutes.
  3. In a separate bowl, whisk together the flour and powdered sugar.
  4. In a mixing bowl, beat the eggs, egg yolks, vanilla extract, and salt until light and frothy.
  5. Pour the melted chocolate mixture into the egg mixture and beat until well combined.
  6. Combine the dry ingredients with the wet ingredients and beat until the mixture forms a smooth batter.
  7. Grease 4 ramekins and divide the batter equally between them. Fill each ramekin about 2/3 full.
  8. Place the ramekins on a baking sheet and bake for 12-15 minutes, until the edges are set and the center is still gooey.
  9. Remove from the oven and let cool for a minute.
  10. Run a knife around the edges to loosen the cakes from the ramekins.
  11. Invert each cake onto a plate and dust with powdered sugar.
  12. Serve immediately with vanilla ice cream if desired. Enjoy!
